How To Make Gucacamole
Most will agree that guacamole has become everyone’s favourite dip in recent years. This simple Mexican side dish has become so popular, in fact, that there are now over 60 different variations on the traditional recipe out there on the web. Not to mention hundreds of different tips on how to make it. Here’s our take on the best way to prepare guacamole from scratch.
The key to good guacamole is a good avocado. Give it a gentle squeeze; if it has a little softness, then you’re good to go. When you get home, keep avocados at room temperature until soft enough to use. When it comes to a good flavour booster, a touch of garlic can make a great difference. For stunning garlic guacamole, just mix in some freshly sliced garlic when you’re blending the ingredients together.
Use a squeeze of lemon or lime for a little acidity and to prevent the mixture from turning brown (or at least as a way to slow down the process). Keep it spicy. Even if you're not a spicy food lover, it just isn’t guacamole without a bit of chilli heat in it. Mexican cuisine is well known for this distinctive touch, so try not to leave it out.
Tomatoes should be finely chopped, but not turned into sauce. Also, allow your guacamole to have some texture. Don’t over mix or over blend; it just needs a bit of mixing for the flavours to combine. Most people enjoy rough-textured guacamole with medium sized avocado pieces in it.
The best way to achieve this is to crush all of your ingredients with a large pestle and mortar, or a fork until combined yet still chunky. If you’re using a blender then just pulse blend. Guacamole is perfect as an accompaniment for burgers and grilled meats or served on its own with some tortilla chips. When cooked to your liking, add a ½ teaspoon of sesame oil to the top of the burger 30 seconds before you remove from the heat and serve with generous helpings of homemade guacamole.
