Comfort in a bowl! This is thick and tasty lentil soup is the perfect winter warmer, and so easy to make with Rajah Mild & Spicy curry powder and tinned coconut cream. Serve with hunks of hot naan bread!

- 15 ml vegetable oil
- 1 onion finely diced
- 2 cloves garlic crushed
- 1.5 tsp fresh ginger root crushed
- 1 large carrot peel and finely diced
- 2 tbsp Rajah Mild & Spicy curry powder
- 250 g dried brown lentils rinsed
- 1 x 400 g tin chopped tomatoes
- 1 litre vegetable stock
- 1/2 cup fresh coriander chopped
- 1 x 400 g tin coconut cream
- salt, freshly ground black pepper and sugar to taste
