Preheat oven on 200º C.
Mix red wine vinegar, ginger, garlic cloves, tomato paste, lemon juice and fresh coriander – coat your chicken pieces with the marinade and set aside while your proceed to prepare your veggies.
Mix all the vegetables, drizzle with olive oil and set aside.
Toss your marinated chicken pieces, and vegetables in a cooking bag and sprinkle with Knorr Spicy Roast Chicken seasoning powder – add marinade and gently massage the bag.
Oven bake for 45 minutes 180º C and broil for 5 minutes for extra golden colour.
